At 18h, a bubble tea shop on the sidewalk of Hang Muoi street (Hoan Kiem, Hanoi) just opened, but only 30 minutes later, Nguyen Ngoc Bach, the owner, shouted: “No more tables, turn off the app (online ordering app), we won’t accept orders from the app anymore.”

Many shippers had to call customers to cancel orders because the shop couldn’t serve them in time.

At the moment, nearly 20 tables in front of the shop were full. Bach and a staff member behind the counter had to work continuously, always busy with different tasks: Taking orders from customers, noting down their names, preparing and brewing bubble tea in clay pots.

Recently, baked bubble tea, a popular beverage on social media platforms, has been sought after by many young people for enjoyment.

The appeal of this drink lies in its unique appearance. Instead of a traditional plastic or paper cup with a large straw, baked bubble tea is served in a clay pot. The ingredients used to create this drink are all “100% natural,” including dried flowers, herbs, red dates, wolfberries, etc., which are beneficial for health, especially for women.

Owner Nguyen Ngoc Bach needs 5-7 minutes to create a complete cup of baked bubble tea for customers. The process of making this drink is quite fascinating, so customers often stand around the counter to observe.

Bach uses the original tea prepared in the afternoon, mixed with a bit of diluted brown sugar. He then pours this mixture into small clay pots, with a capacity of about 350ml.

The baked tea is “cooked” on a fire, and when the tea releases a fragrant aroma, fresh unsweetened milk is added. The shop owner gently stirs the tea with a spoon until it boils and adds dried flowers and fruits.

The shop on Hang Muoi street has two stoves, each capable of boiling 4-5 clay pots at the same time. Although the tea-making process is quick, due to the high number of customers, each customer usually has to wait 15-45 minutes before holding a cup of baked bubble tea.

Since the tea is boiled directly in clay pots, it will be hot to the touch for customers. The tea’s taste is not overly sweet due to the diluted brown sugar.

Furthermore, when holding a cup of baked bubble tea, customers will also experience a subtle fragrance of various herbs, along with the scents of roses, jasmine, or cloves.

After being boiled in the clay pot, the baked bubble tea is poured into a paper cup, each cup priced at 35,000 VND (Photo: Thanh Thuy).

Each cup of baked bubble tea is currently sold for 35,000 VND. The shop only serves hot bubble tea, suitable for the winter weather in Hanoi.

“I find the price quite reasonable. Normally, a non-branded bubble tea would cost around 50,000 VND per cup. When drinking it, the taste is sweet and fresh, with the aroma of tea and various herbs. However, the taste is not significantly different, not leaving a lasting impression,” shared Pham Ngoc, a customer.

The baked bubble tea shop on Hang Muoi street is only open from 18:00 to 23:00. According to Ngoc Bach, the shop sells about 300-500 cups of baked bubble tea each evening.

“Since the shop only serves hot bubble tea, we only sell in the evening. In reality, this type of tea focuses more on the experience of aroma and warmth rather than creating a flavor profile. Because the ingredients are all natural, the tea’s taste will be lighter,” Ngoc Bach explained.
