Thu Anh’s sandwich is one of the two most popular Vietnamese dishes at Backstage restaurant. Since the recent event where 4 members of the Blackpink music group shared a meal at the restaurant, this dish has become even more sought after.

In the restaurant’s menu, the sandwich does not have a special name but is sold at a price of 260,000 VND per piece. When ordering the sandwich, customers are given a complimentary appetizer, a light snack made according to Backstage’s own recipe.

About 15 minutes after ordering, the sandwich is brought to the customer’s table. The sandwich is smaller than a typical sandwich, cut in half and stacked on top of each other to reveal a fairly generous filling.

The filling of the sandwich is what determines the difference in the price of 260,000 VND. It includes: grilled pork shoulder, chicken or pork liver pate, pork ears, pickles, cucumbers, coriander, and served with sambal chili sauce.

The meat is cooked at a low temperature for 6 hours to produce the most tender meat while retaining the original flavor. Then, the meat is grilled with a special technique to enhance the aroma.

To ensure the Vietnamese flavor, the sandwich also includes sliced cucumbers, pickles, and coriander. These ingredients harmonize in the crispy crust that has been baked and prepared by the restaurant’s chefs since midnight to serve breakfast.

According to Chef Hoang Nam, the head chef at Backstage restaurant: “Each small ingredient, from the fresh herbs to the pickled vegetables, is carefully selected by the restaurant. 100% are fresh and safe ingredients, no preservatives, ensuring food safety.

The suppliers must commit to us about the quality and stability of the ingredients so that the sandwich served to the customers meets a 5-star quality.”

Chef Nam also added that before finalizing the recipe, he and his colleagues tried many different sandwich shops across the country. After the surveys, the team analyzed which flavor is the traditional taste of Vietnamese sandwich, and which flavor the restaurant wants to achieve.
